You are spending an awful lot on shipping?
Oh god no, that's just the build site - I'll be going with a single brick and mortar place - all said and done it should come out a bit more than if I shopped around but fuck shipping in this country, ideally I'm going to pick up.

Go for an M.2 drive, samsung 960pro or intel 600P. Both for speed and neatness (single screw holds it onto the mobo)
This, M.2 slots avoid sata. Install OS in NVME mode.

You're not going to need a 960 pro unless you know you need a 960 pro. For your use case, sounds like the 960 EVO is a more sensible choice value-wise. You won't notice the speed difference in any real-world tasks you described. Heck, you wouldn't even notice it between the 850 EVO and 960 EVO unless you regularly use applications that benefit from a 960 Pro, at which point it would have been your first choice.
